Raw Green Salsa Salad

  • 1 diced cucumber

  • 1 diced avocado

  • 1/2 diced raw onion

  • Lemon juice

  • 1 fennel bulb, diced finely

  • 1-2 tbsp. olive oil

  • 1 tbsp. honey (optional)

  • Dash of sea salt

  1. Combine ingredients

  2. Add protein to salad if desired


Chickpea Salad w/ Avocado

  • 2 cups cherry tomatoes

  • 1.5 cup cooked quinoa

  • 1 avocado chopped

  • 1 tsp. salt + pepper

  • 2 tbsp. chives chopped

  1. Comine ingredients

Southwestern Bean Salad

  • 1 can black beans + chickpea (or pinto)

  • 1/2 cup green onion chopped

  • 1 cup salsa or chopped cherry tomatoes

  • 1/2 cup cilantro or basil chopped

  • 1 avocado peeled + chopped

  • 2 tbsp. lime juice

  • 1-2 tbsp. extra virgin olive oil

  • 1 tsp. cumin powder

  • Salt + pepper

  1. Combine ingredients

Super Food Salad w/ Lemon Tahini Dressing

  • 1 cup spinach

  • 1/2 cup blueberries + strawberries

  • 4 oz. salmon or chicken

  • 1/4 cup sliced almonds

  • 1/4 cup sliced orange/yellow/red pepper

    Dressing:

  • 1/2 cup lemon juice

  • 1/3 cup extra virgin olive oil

  • 1/3 cup tahini

  • 2 tbsp. honey

  • 2 cloves minced garlic

  • Salt + pepper to taste

  1. Combine ingredients

Avocado & Bean Salad

  • 3-4 cup mixed green of choice

  • 1 can black beans, rinsed

  • 1/2 - 1 cup chopped cilantro

  • Chopped onion or chives

  • 1-2 diced avocado

Dressing:

  • 1 cup olive oil

  • Garlic Expressions brand

  • 1/4 cup apple cider vinegar

  • Salt + pepper

Blueberry Basil Kale Salad w / Chicken

  • 2 cups kale

  • 1.5 cups basil leaves, chopped’

  • 3 cups chicken, cooked + cubed

  • 1/2 cup blueberries

  • 1/4 cup chopped walnuts

  • 1/2 cup sliced cucumber

Dressing:

  • 1/2 cup blueberries

  • 1/4 cup fresh basil leaves

  • 2 tbsp. extra virgin olive oil

  • 1/4 cup apple cider vinegar

  • 1 tsp. honey

  • Salt + pepper

  1. Puree ingredients in a blender

Avocado Tuna Salad Lettuce Wrap

  • 1 can wild caught tuna, drained

  • 1/2 avocado, chopped

  • 1/4 onion, chopped

  • 2 tsp. lemon juice

  • 1 tsp. olive oil

  • Romain lettuce leaves

  1. Combine ingredients + serve in lettuce leaves

Anything Goes Salad

  • 2-4 cups of greens

  • 1/2 cup of any dried fruit (any you have in pantry)

  • Handful of nuts

  • Leftover veggies in fridge (onions, peppers, broccoli, carrots)

Dressing:

  • Drizzle extra virgin olive oil + apple cider vinegar + salt + pepper over salad

Kale Beet Salad

  • 4 cups kale leaves, chopped

  • 1 cup dried cherries

  • 1 cup chopped walnuts or favorite nut

  • 2 large beets, cooked + cooled + diced

  • 1 cup bacon, crumbled (optional)

  • Salt + pepper

Dressing:

  • 1/2 cup extra virgin olive oil

  • 1/8 cup apple cider vinegar

  • Salt + pepper

  1. Combine ingredients + drizzle with dressing

  2. Add cooked chicken if desired

Mexican Green Bean Salad

  • 1 lb. fresh green beans, ends snapped off + cut to 1.5 inch pieces (steamed until par cooked)

  • 1/4 cup onion, finely chopped

  • 2 tbsp. lime juice or white vinegar

  • Salt to taste

  1. Combine + serve chilled

Millet/Quinoa Salad

  • 1 cup millet

  • 1/2 cup quinoa

  • 3 cups water

  • 1 cup berries

  • 1/2 cup slivered almonds

  • 1/4 cup yellow onion, diced

Dressing:

  • 1/4 cup lemon juice

  • 1 tbsp. coconut milk

  • 2 tbsp. dijon mustard

  • 1 tbsp. poppy seeds

  1. Prepare grains with water, as instructed on package + allow to cool

  2. Combine ingredients + dressing + grain

Chickpea Salad

  • 1 can chickpeas, rinsed

  • 2 tomatoes, diced

  • 1 celery stalk, diced

  • 2 scallions, thinly sliced

  • 1/2 cup Kalamata olives, chopped

  • 4-8 basil leaves, chopped

  • 1/4 cup parsley, chopped

  • 1 tbsp. extra virgin olive oil

  • 1 tsp. capers (optional)

  • Salt + pepper to taste

  1. Combine ingredients

Curry Turkey or Chicken Salad

  • 4 turkey breasts or chicken breasts, cooked + chopped

  • 1 celery stalk, diced

  • 4 green onions, chopped

  • 1 apple, peeled + diced

  • 2/3 cup raisins or dried cherries

  • 1/2 cup pecans or walnuts

  • 1/2 tsp. curry powder

  • 3/4 cup organic mayonnaise

  1. Mix ingredients in a bowl + serve chilled

Broccoli Salad w/ Cashew Dressing

  • 6 cups broccoli, chopped into florets

  • 1/2 cup red onion, chopped

  • 1/4 cup raisins

  • 1 cup raw sunflower or pumpkin seeds

Dressing:

  • 1 cup extra virgin olive oil

  • 4 cloves garlic, minced

  • 1/2 cup raw cashews

  • Juice of 1 lemon

  • Pinch of salt

  1. Blend dressing ingredients in a high powered blender + drizzle over salad

  2. Combing salad ingredients + cover with dressing

Shredded Beat & Carrot Salad

  • 2 tbsp. orange juice

  • 2 tbsp. extra virgin olive oil

  • 2 tbsp. lemon juice

  • 1/2 tsp. ginger (optional)

  • 1 cup carrot, peeled + shredded

  • 1 cup beet, peeled + shredded

  • 1/4 tsp. salt

  • 2 tbsp. mint, chopped

  1. Whisk together liquid ingredients + combine with carrots + beets
